Chicken Cheese Chowder

This is one of those recipes that is great for a chilly fall or winter night, not for the summer, however we have had a crazy week so I haven't been experimenting much. This chowder is thick and creamy and tastes great even if you don't want to add the chicken.  It is a cheap and filling meal!

4 cups chicken broth
1 1/2 cups diced potatoes                                                                        
1 cup diced onion (I use onion powder I also add in garlic powder)                                                                    
1/3 cup margarine
1/3 cup all-purpose flour
3 cups milk
1 tablespoon soy sauce
1 pound processed cheese, cubed
2 cups chopped, cooked chicken meat

  1. In a large stock pot combine chicken broth, potatoes, and onion. Cover and bring to a slow boil for 15 minutes, or until the vegetables are tender.
  2. In a medium sauce pan melt butter over low heat, add flour and stir until smooth.
  3. Let simmer for 1 minute and then increase temperature to medium.
  4. Stir mixture constantly, while gradually adding milk.
  5. Continue to stir until thick and bubbly.
  6. Add flour mixture to potatoes.
  7. Add soy sauce and then gently stir in cheese.
  8. Continue to stir until cheese is completely melted.
  9. Add chicken, heat through and enjoy.
