Blueberry Crumble Bars

I also made these for hubbies safety meeting at work this week, he said they were good but not as good as the Strawberry Brownies.

½ cup granulated sugar
½ cup brown sugar
1 tsp. baking powder
3 cups all-purpose flour
1 cup (2 sticks) butter
1 egg, slightly beaten
½ tsp. vanilla

4 cups fresh blueberries
½ cup granulated sugar
3 tsp. cornstarch

Preheat oven to 375°F.
Lightly grease a 9x13-inch baking pan and set aside.
Start by preparing the crust and crumble.
In a medium bowl, combine both sugars, baking powder and flour.
Using a pastry cutter, cut butter, egg and vanilla until the mixture is well combined and resembles coarse crumbs.
Pat half of the mixture into the bottom of the prepared pan.
In a separate bowl, combine all of the filling ingredients.
Stir gently.
Sprinkle the blueberry mixture evenly over the crust.
Crumble the remaining dough over the top of the blueberries.
Bake for 45 minutes or until the top is lightly browned.
Remove from oven and allow to cool completely before cutting.

Phillip needs snacks for work tomorrow.
