Copy Cat Cracker Barrel Carrots

These were a hit in our house!

2 pounds baby carrots raw
1 teaspoon salt
1 tablespoon brown sugar
2 tablespoons butter
 
Rinse carrots and place in a 2-quart saucepan.
Pour enough water in saucepan to just cover the top of the carrots.
Cover carrots with lid and place on medium heat and bring to a boil.
Turn heat to low and simmer 30 to 45 minutes until the carrots are tender when pricked with a fork.
When carrots start to become tender, pour off half the water from the carrots.
Add salt, brown sugar and butter.
Place lid on pan and cook over low heat until completely tender.
Add more salt if desired.
