Honey Roasted Carrots

Next time I will have to double this recipe, it was all gone very quickly!  Hubby said it was his favorite part of dinner and some of the best carrots he has ever had.  My son stood over the bowl devouring them (I know this isn't exactly sanitary, but if he likes his veggies that much I am ok with it). 

These carrots were fast, simple, and delicious.  This recipe is definitely a keeper.  I hope you try them soon.

3 cups of baby carrots
1 tbsp honey
1 tbsp. olive oil
1/2 tsp Sea Salt
1/4 tsp Fresh Ground pepper

Preheat the oven to 425 degrees.
Place carrots into a shallow bowl and coat with olive oil, sea salt, and fresh ground pepper.
Arrange carrots on a baking sheet and roast for 20-25 minutes. 
Shake carrots around about half way through so they roast and get crispy on all sides.
Return carrots to bowl and add the honey. 
Stir to coat well. 
Taste to see if they need any additional salt and pepper.
