Twix Bars

I made these last night for dinner and have to say they are very tasty.  I tweaked the original recipe quite a bit and ended up making these into bars instead of cookies.  If you decide to make these into bars like I did, you will not need as much of the shortbread crust.  We ended up trimming some of it off the bottom of the bars, it dries these out to much.  Other than that this is a great easy recipe that anyone can make.
1½ cups butter, softened
1 cup powdered sugar
1 teaspoon vanilla
3 cups flour
¼ teaspoon salt
15 oz of caramel (I like the little round pieces)
2 Tablespoons whipping cream
2 cups milk chocolate chips
2 tablespoons whipping cream
Preheat oven to 350 degrees F.
In a large bowl, cream butter and sugar together.
Add in the vanilla, flour and salt and mix until well combined.
Place dough onto a lightly floured surface.
Roll dough out to ½ inch thick.
With a small biscuit cutter, cut out cookies and place on greased cookie sheet.
Bake at 350 degrees F 14-16 minutes.
Remove from oven and let cookies cool completely.
Melt caramel in a double boiler.
Spread caramel over the cooled cookies.
Let caramel cool completely before spreading on the chocolate.
Melt chocolate chips and whipping cream in double boiler until melted and smooth.
Spread over the tops of cooled caramel.
Let chocolate set before eating and serving. (Pop it into the fridge to set up faster)

* You can also make these cookies in a bar form, which is what I did.  They will need to bake significantly longer, mine took about 25-30 minutes.
* Making these into bars was much cleaner and simpler.
* If doing bars you won't need quite as much shortbread...
