Tomato Pie

This dish was AMAZING!  I loved how nice and smooth it was and the flavor was spot on.  Hubby and I loved it and the kids thought it was ok...  Fortunately for me there was a small slice left over so I had it for lunch the next day.

15 ounces ricotta cheese
4 eggs
1/4 cup parmesan cheese
1/2 t. salt + more for sprinkling
1/8 t. pepper + more for sprinkling
1/4 c. cream
1 T. cornstarch
1 t. onion powder
1t. garlic powder
1 1/2 sliced tomatoes
1 pie crust

Fit pie crust into pie plate.
Mix together ricotta cheese, eggs, parmesan, salt, pepper, garlic powder, and onion powder.
In a separate cup stir together cream and cornstarch until smooth.
Whisk the cornstarch into the cheese and egg mixture. 
Pour this mixture into a pie crust.
Slice tomatoes and blot with paper towels to remove extra juice.
Place on top of pie.
Sprinkle the tomatoes with salt and pepper.
Bake 40-50 minutes or until center is set.
