Parmesan Potato Balls

Just a couple of nights ago I made an amazing side dish that my family raved about.  In fact I think it made my husband fall in love with me all over again.  The dish is super simple and doesn’t take too much prep time.  The worst part of the whole thing is making sure you have no lumps in your potatoes.  So gather your ingredients and let’s get cooking!

1 tablespoon garlic salt
1 tablespoon butter
1 teaspoon lemon juice
2 cups mashed potatoes (room temp)
2 cups parmesan cheese
2 cups Italian style bread crumbs
3 eggs

Place mashed potatoes in a large bowl.
Add in garlic salt, butter and lemon juice.
Next go ahead and mix in your parmesan cheese.
Roll the potato mixture into balls.
Whisk the eggs in a small bowl.
Place bread crumbs in a shallow dish (I use a pie plate).
Dip the balls into the eggs and then roll in the bread crumb mixture.
I do this step a couple of times so that they have a nice coating.
Heat approximately 2 inches of vegetable oil in a large pan.
Fry potato balls in batches (they take about 3 minutes each).
Drain on paper towels and then devour them!!!

Almond Croissants

I made these for life group at church this past Sunday and am so glad I did.  I didn’t have a chance to try the pastry part because they were devoured but the icing was AMAZING ( I might have licked the spoon when I was done drizzling). 

2 cans (8 ounces) crescent rolls
6 ounces almond paste
1 cup powdered sugar
3-4 tablespoons milk
½ teaspoon almond extract
Sliced almonds

Pre heat oven to 350 degrees.
Spray cookie sheet with nonstick spray.
Separate dough into triangles.
Slice almond paste into equal amounts.
Place on the larger end of the triangle.
Roll up and place on the cookie sheet.
Bake 12-14 minutes till golden brown.
Cool for 5 minutes.
While cooling whisk together powdered sugar, milk, and almond extract.
Drizzle over the top of the crescents and top with sliced almonds.
Serve warm!

Monday is Halloween so we will be out trick or treating and I won’t be able to make dinner.  Belle is being Pocahontas, she put a lot of thought into it.  The boys decided at the last minute to be a power ranger (we already had the costume) and an army man.

Tuesday we are going to the opening night of Santa Land, a Christmas light park, near where we live.  The past two years we have been the first people to go through the park for the entire season and we are hoping to do that again tonight.  I love going opening night because there is no one else there and we can move through the park at our own pace.  This has turned into a fun family tradition for us and the kids look forward to it every year… and so do we.  Eating at Cracker Barrel afterwards is also a fun treat. 

Wednesday night hubby and I are going to a chili cook off that his company gave us tickets too.  There will be all kinds of vendors set up with free food, wine and beer!  How great is that?  The fat girl in me is super excited about this. 

Thursday night I am going to a painting party with my mom and best friend.  We are learning to paint a scarecrow…  I am not the best painter ever so this might be interesting. 

Hopefully Friday I will be able to make dinner again but we will be working on our old house to get it ready to rent out.  I REALLY need to start getting some money for it. J

Peanut Noodles

8 ounces spaghetti
2 tablespoons vegetable oil
1 teaspoon onion powder
1/3 cup creamy peanut butter
¼ cup soy sauce
¼ cup hot water
1 tablespoon apple cider vinegar
1 teaspoon sugar

Cook spaghetti and drain.
While noodles are cooking let’s get the sauce going.
Heat vegetable oil over low heat and stir in the onion powder.
Increase the heat to medium and add in peanut butter, soy sauce, water, vinegar, and sugar.
Stir until combined and then remove from heat.
Toss with spaghetti.

Top with cashews (I don’t like raw peanuts but I wanted some crunch so I added cashews to the top).

My Crazy Wonderful Life

The past week has been probably one of the busiest of my life.  Last Tuesday I was in charge of a fall carnival for my PTA group.  I got all the games together, prizes, workers, etc.  We had an amazing turn out so I was beyond thrilled but exhausted by the end of it.  Add to that the fact that we were moving out of our home of 7 years and you can see why I was a little too busy to blog.  I am a neat freak and all the boxes and disorganization pushed me to my limit. 

We spent the weekend moving and I am happy to say that every box has been unpacked!!!  I am also beyond thrilled with how well the process went and am so excited to start enjoying our new home.  Before we relax though we have to get our other house ready to rent out, and we are also in the process of buying another house so I expect things to slow down sometime around Christmas.

This week that we are in now is an exciting one for our town.  It is Yamboree week.  Thousands and thousands of people pour into town to celebrate.  We will have carnival rides, livestock shows, shop projects, farmers markets, parades, floats, bands, and the best food EVER!!!

Hot Toddy

Being around over 1,000 kids at school I knew it was just a matter of time before I caught a cold…  Sunday ended with me not being able to speak over a whisper I seriously had no voice at all.  Try being a mom and having your kids to get their things together for the next school week when you can barely talk.  Not fun! 

Monday was even worse I could talk (barely) but I sounded like I had been a chain smoker for 60 years.  I texted my husband before I left work and asked him to make me a Hot Toddy.  I had never had one before and fully expected it to be disgusting.  While it was not my favorite drink ever, it was soothing and didn’t taste half bad. 

So I sat drinking my HT, rubbed down from head to toe (literally) with vicks vapor rub and realized that I smelled exactly like my great grandmother.  I remember going to her home to visit her and the smell would over power you as soon as you opened the door.  I remember her LOVE/OBSESSION with Elvis and this huge oval shaped brown rug that was in her living room. 

I’m not sure which helped more but I feel MUCH better today than I did yesterday and that is a HUGE blessing.

1 cup of hot water
1 TB honey
¼ of a lemon
3 whole cloves (left this out because we didn’t have any)
½ of a cinnamon stick

1 ½ ounces whiskey (we used honey whiskey)

Pretty sure I am dying, at least that is how it feels.  I don’t necessarily feel awful BUT my voice is nearly gone and I spend most of my day talking with parents, kids, and answering the phone.  I think I might actually be scaring some people because I sound so bad. ;-)  Thankfully other than the voice I am fine.  Anyway, with that being said we will probably take it pretty easy this week on meals.  I need some time to relax.

Ham and Swiss Roll Ups

I made these for hubby's game night and they were devoured.  I love when he has the guys over because I can try out new recipes on them and they will give me an honest opinion.  They really seemed to enjoy these, but the best part was that this dish came together soooooo quickly and easily.

1 can Pillsbury Refrigerated Pizza Crust
10 Slices Ham
10 slices Swiss Cheese
½ cup Butter
2 tablespoons Brown Sugar
1 tablespoon Worcestershire Sauce
1 tablespoon Dijon Mustard

Preheat oven to 350 degrees.
Spray a 9x13 baking dish with cooking spray.
Unroll the pizza dough onto a cutting board and shape into a rectangle.
Top with ham and cheese slices.
Roll up starting on the longer side.
Pinch the seams together and flip the roll so that it is seam side down on the cutting board.
Cut into sections (you should get 10-12).
Place in the 9x13 baking dish.
Next you will blend the butter, brown sugar, Worcestershire sauce and Dijon mustard in a pan over medium heat.
Whisk until the butter has melted and the glaze is combined.
Pour evenly over the rolls.
At this point you can put them in the refrigerator for later.
OR you can go ahead and bake them uncovered for 25 minutes.
When they come out of the oven drizzle a little of the juice from the bottom of the pan over the top of the rolls.

Chicken, Ricotta and Lemon Pasta


I started out with a base recipe and ended up making a few changes to satisfy our taste buds.  I feel like originally the lemon and ricotta would have been overpowering and would have been the only flavors tasted.  After a few small adjustments this dish really popped and was a wonderful addition to the rest of the meal.

4-6 Chicken Breasts (sliced into strips)
2 lb Pasta
Salt
Black Pepper
2 tsp Onion Powder
2 tsp Garlic Salt
1 cup Water (reserved from pasta)
4 tbsp Extra Virgin Olive Oil
3 tsp Lemon Zest
4 tbsp Lemon Juice
3 cups Ricotta
1 cup Parmesan

Cook water in pasta according to package.
Reserve 1 cup of the pasta water.
Return the pasta to the pot.
Over medium heat add in salt, pepper, onion powder, garlic salt, lemon zest, lemon juice, and ricotta.
Add reserved water until you reach the consistency that you prefer. 
Pour onto serving dish and top with chicken and parmesan.

Cheeseburger Gnocchi

I love World Market and whenever we are in Tyler I have to go.  While there I picked up some gnocchi and decided that I would use it for dinner later in the week.  Last night I needed a quick easy meal and this recipe was perfect.  It was fast, yummy, filling, AND I got to use my special purchase from World Market. 

1 tb butter
1 16 ounce package gnocchi
1 pound ground beef
2 tsp salt
2 tsp pepper
2 tsp cumin
½ tsp paprika
2 tsp onion powder
2 tsp garlic powder
2 cups beef broth
½ cup heavy cream
2 cup cheddar cheese
1/3 cup green onions

Melt butter in a large skillet over medium high heat.
Add gnocchi in a single layer and toast till brown.
Flip the gnocchi and cook the other side until golden brown also.
Remove gnocchi to a plate and set to the side.
Turn the heat to high and return the skillet to the stove.
Add the beef and seasonings and cook till brown.
Drain off any fat.
Add in the beef broth and gnocchi.
Stir to combine well.
Bring to a boil and cook until the gnocchi is tender and the liquid has mostly evaporated.
Remove the skillet from the heat and add the cream and part of the cheese.
Stir to combine.
Top the dish with the remaining cheese.

Place under the broiler until the cheese starts bubbling and turning brown.

M & M Cookies

"These are the best cookies EVER."  The kids repeated this over and over as they chowed down on them.  The M&M's made them so pretty and colorful and the dough is soft yet crunchy at the same time.
 
2 cups all-purpose flour
1 tablespoon cornstarch
3/4 teaspoon salt
1 teaspoon baking soda
3/4 cup brown sugar
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 tablespoon vanilla extract
1 1/2 cup M&Ms
In a bowl, mix together flour, cornstarch, salt and baking soda.
In the bowl of a stand mixer cream together butter and sugars until light and fluffy (about 2-3 minutes).
With the mixer going very slow, add in the egg and the vanilla.
Mix until all ingredients are incorporated.
Scrape sides of the bowl if needed.
Now add dry ingredient mixture gradually until dough forms.
Stir in the M&Ms by hand.
Refrigerate dough for 30 minutes.
Preheat oven to 350 degrees F and line baking sheets with parchment paper.
      Form balls.
      Bake for 9-11 minutes or until edges are just barely golden.
      Remove from oven and let cool for a couple of minutes on baking sheet before removing.
      Store in an airtight container.
