Parmesan Potato Balls

Just a couple of nights ago I made an amazing side dish that my family raved about.  In fact I think it made my husband fall in love with me all over again.  The dish is super simple and doesn’t take too much prep time.  The worst part of the whole thing is making sure you have no lumps in your potatoes.  So gather your ingredients and let’s get cooking!

1 tablespoon garlic salt
1 tablespoon butter
1 teaspoon lemon juice
2 cups mashed potatoes (room temp)
2 cups parmesan cheese
2 cups Italian style bread crumbs
3 eggs

Place mashed potatoes in a large bowl.
Add in garlic salt, butter and lemon juice.
Next go ahead and mix in your parmesan cheese.
Roll the potato mixture into balls.
Whisk the eggs in a small bowl.
Place bread crumbs in a shallow dish (I use a pie plate).
Dip the balls into the eggs and then roll in the bread crumb mixture.
I do this step a couple of times so that they have a nice coating.
Heat approximately 2 inches of vegetable oil in a large pan.
Fry potato balls in batches (they take about 3 minutes each).
Drain on paper towels and then devour them!!!
